Ingredients
  • 3 Pounds Beef Roast -- diced
  • 1 Cup Cold Water
  • 1/8 Cup White Wine Vinegar
  • 1/4 Teaspoon Cinnamon
  • 1/4 Teaspoon Clove -- ground
  • 1/4 Cup Olive Oil
  • 2 Medium Onion -- chopped
  • 1 Tablespoon Garlic
  • 1 Medium Yellow Pepper -- chopped
  • 2 Medium Tomatoes -- chopped
  • 1 Large Carrot -- chopped
  • 1 Teaspoon Cayenne
  • 3 Tablespoons Cilantro
  • Salt And Pepper -- to taste
Directions add beef, water, vinegar, cinnamon, and clove to baking dish. cover and bake at 300 degress for 2 1/2 hours, turning meat over once. in skillet saute in oil, onion, garlic and peppers until onion is transparent. add remaining ingredients and simmer uncovered for 15 minutes. transfer meat and drippings to onion mixture. simmer for 15 more minutes.
