Cuban   -   Sopa De Frijoles Blancos Con Tomate   adapted from A Taste of Cuba by Linnette Creen

  • 2 Tablespoons Butter
  • 1 Pound Pork -- cubed
  • 1 Medium Onion -- finely chopped
  • 6 Cups Water
  • 2 1/2 Cups Chicken Stock
  • 1 Cup White Beans -- soaked overnight
  • 3 Cups Tomatoes -- seeded
  • 1/2 Cup White Wine
  • Cilantro -- for garnish
Directions Melt butter over medium heat and saute pork and onions and fry until pork is brown on both sides. Add 2 cups water and stir. Remove from stove and set aside. In large pot, bring remaining water and stock to a boil. Add beans, tomatoes, wine and the pork and onion mixture. Reduce heat to medium, cover and simmer for 2 hours. Garnish soup with cilantro and serve.
