Cuban - Sopa De Frijoles Colorados

Ingredients
|
- 2 Tablespoons Butter
- 2 Tablespoons Olive Oil
- 1 Large Onion -- finely chopped
- 1 Large Carrot -- chopped
- 2 Tablespoons Parsley -- finely chopped
- 3 Cloves Garlic -- finely chopped
- 6 Cups Water
- 2 Pounds Kidney Beans -- soaked overnight
- 1 Pound Pork -- cubed
- 3 Large Tomatoes -- seed and chop tomato
- Cilantro -- for garnish

Directions
|
Melt butter with the oil in a large soup pot. Add onions, carrots, parsley and garlic. Cover and cook until the onions are tender. Add water and bring to a boil over high heat. Add beans and pork to soup and bring them back to a boil. Add tomatoes, then cover and reduce heat to low. Simmer for 1 1/2 hours. Serve garnished with cilantro.
