Cuban   -   Sopa De Frijoles Colorados   adapted from A Taste of Cuba by Linnette Creen

  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- finely chopped
  • 1 Large Carrot -- chopped
  • 2 Tablespoons Parsley -- finely chopped
  • 3 Cloves Garlic -- finely chopped
  • 6 Cups Water
  • 2 Pounds Kidney Beans -- soaked overnight
  • 1 Pound Pork -- cubed
  • 3 Large Tomatoes -- seed and chop tomato
  • Cilantro -- for garnish
Directions Melt butter with the oil in a large soup pot. Add onions, carrots, parsley and garlic. Cover and cook until the onions are tender. Add water and bring to a boil over high heat. Add beans and pork to soup and bring them back to a boil. Add tomatoes, then cover and reduce heat to low. Simmer for 1 1/2 hours. Serve garnished with cilantro.
