Cuban - Sopon De Frijoles Negros Con Aji Picante

Ingredients
|
- 2 Cups Black Beans -- soaked overnight
- 6 Cups Water
- 1 Medium Green Bell Pepper -- chopped
- 2 Medium Onions -- chopped
- 1 Tablespoon Garlic -- finely chopped
- 2 Stalks Celery -- finely chopped
- 2 Medium Carrots -- finely chopped
- 1/2 Teaspoon Cayenne
- 3 Large Tomatoes -- finely chopped
- 1 Cup Dark Beer
- 1/4 Cup White Wine Vinegar
- 1 Pound Ground Beef -- browned and drained
- 1 Pound Chorizo -- browned and drained
- Scallion -- for garnish

Directions

In large pot, combine beans and water, bring to a boil. Add pepper, onions, garlic, celery, carrots, cayenne, tomatoes, beer and vinegar. Cover, reduce heat to medium and simmer for 1 hour. Add beef and chorizo and simmer for 1/2 hour. Sprinkle with scallion and serve.
