Czech   -   Hunters Mushroom Soup   adapted from Czech Cuisine

  • 12 Ounces Fresh Mushrooms -- sliced
  • 1 Large Onion -- finely chopped
  • 1 Tablespoon Olive Oil
  • 5 Strips Bacon -- chopped
  • 1/4 Cup Flour
  • 5 Cups Broth
  • 1 Cube Bouillon
  • 4 Tablespoons Cream
  • Salt And Pepper -- to taste
  • 1 Cup Red Wine
  • Parsley -- finely chopped
Directions Saute mushrooms, onions and bacon in oil until well browned. Sprinkle with flour. Add broth and bouillon. Simmer for 5 minutes. Add cream, salt, pepper and wine. Simmer for 5 minutes. Sprinkle with parsley and serve.
