Czech   -   Letcho With Mushrooms   adapted from Czech Cuisine

Ingredients
  • 12 Ounces Mushrooms -- sliced
  • 1/3 Cup Butter
  • 1 Small Onion -- finely chopped
  • 1 Small Green Pepper -- finely chopped
  • Salt And Pepper -- to taste
  • 2 Large Tomatoes -- finely chopped
  • 5 Large Eggs
Directions Saute onion, mushrooms, peppers, salt and pepper. Saute for 10 minutes. Add tomatoes and simmer for 5 minutes. Beat eggs and pour over. Allow to cook until eggs are set. Serve with sourdough bread.
