Czech   -   Sour Cream Soup From The Giant Mountains   adapted from Czech Cuisine

  • 5 Cups Vegetable Broth
  • Salt -- to taste
  • 8 Ounces Dried Mushrooms -- any kind
  • 1 Teaspoon Caraway Seeds
  • 1 Ounce Yeast
  • 2 Ounces Butter
  • 1 Large Onion -- finely chopped
  • 4 Medium Eggs
  • 6 Large Potato -- sliced
  • 1 Cup Sour Cream
Directions Boil mushrooms with caraway in salted water for 30 minutes. Mix yeast in a little warm water and add to soup. Saute onion until brown in the butter. Add to soup. Hard boil the eggs and chop. Add potato slices and boil until tender. Stir in sour cream and eggs. Serve.
