Carribean and Tropical - Baked Edam Stuffed With Shrimp From Curacao

Ingredients

- 3 Pounds Edam Cheese Wheel
- 1/2 Pound Small Shrimp -- shelled
- 1 Medium Onion -- finely chopped
- 2 Tablespoons Butter
- 1 Medium Tomato -- chopped
- 1/4 Teaspoon Salt
- 1 Dash Cayenne
- 1 Dash Black Pepper
- 1 Slice Bread -- crumbled
- Olives -- chopped
- 1 Small Gherkins -- chopped
- 1 Medium Egg -- lightly beaten

Directions

Remove wax from cheese. Slice off top 1 inch and reserve. Hollow out the cheese leaving 1/2 inch shell. Shred removed cheese and mix with shrimp. Set aside. Saute onion in butter, stir in tomato, salt, cayenne and pepper. Cook until all liquid has evaporated. Add to bowl, along with remaining ingredients. Toss to mix. Fill cheese cavity with mixture. Put lid in place. Wrap tightly in foil. Bake in oven for 30 minutes or in coals.
