- 1 Pound Dried Blackeyed Peas
- 6 Cups Water
- 1 Pound Cooked Ham -- diced
- 2 Sprigs Parsley -- minced
- 2 Sprigs Thyme -- chopped
- 1 Stalk Celery With Leaves -- finely chopped
- 1 Small Onion -- finely chopped
- 3 Medium Tomatoes -- chopped

soak and cook peas as directed. add remaining ingredients and cook for 15 more minutes and serve.
