Carribean and Tropical   -   Black Eyed Pea Soup (Virgin Islands)   adapted from iron pots and wooden spoons

  • 1 Pound Dried Blackeyed Peas
  • 6 Cups Water
  • 1 Pound Cooked Ham -- diced
  • 2 Sprigs Parsley -- minced
  • 2 Sprigs Thyme -- chopped
  • 1 Stalk Celery With Leaves -- finely chopped
  • 1 Small Onion -- finely chopped
  • 3 Medium Tomatoes -- chopped
Directions soak and cook peas as directed. add remaining ingredients and cook for 15 more minutes and serve.
