Carribean and Tropical   -   Calypso Shrimp With Black Bean Salsa (Aruba)   adapted from Betty Crockers New International Cookbook

  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Olive Oil
  • 1 Clove Garlic -- chopped
  • 1 Teaspoon Ginger Root
  • 1 Pound Medium Shrimp -- uncooked peeled
  • Black Bean Salsa (Aruba)
  • Lime Wedge -- garnish
Directions Mix all except shrimp and black bean salsa. Add Shrimp & let marinate for 15 minutes. Saute shrimp mixture for 5 minutes, turning once. Arrange shrimp on plates, serve salsa along side.
Serves 4
