Carribean and Tropical   -   Caribbean Shrimp Curry (Guadelope)   adapted from island cooking

  • 1/4 Cup Butter
  • 3 Medium Onions -- chopped
  • 1 Chayote Fruit -- peeled and chopped
  • 2 Cloves Garlic -- finely chopped
  • 2 Tablespoons Curry Powder
  • 3 Tablespoons Flour
  • 2 Cups Chicken Broth
  • 1 Tablespoon Lime Or Lemon Juice
  • 1 Bay Leaf
  • 1/4 Teaspoon Ground Ginger
  • 2 Medium Tomatoes -- chopped
  • Salt And Pepper -- to taste
  • 2 Pounds Raw Shrimp -- cleaned and deveined
Directions saute, onion, chayote, garlic, curry powder in butter for 5 mintues. stir in flour. add chicken broth, lime juice, bay leaf, ginger, tomatoes, salt and pepper and bring to a roiling boil. reduce heat and simmer fro 20 minutes stirring occasionally. add shrimp, cover and cook about 8 minutes or until shrimp turns pink. discard bay leaf before serving.
