Ingredients
  • 6 Cups Chicken Stock
  • 2 Teaspoons Allspice
  • 1/2 Teaspoon Red Pepper Flakes
  • 4 Cloves Garlic -- Chopped
  • 1 Large Onion -- Chopped
  • 2 Stalks Celery -- Chopped
  • 2 Medium Carrot -- Chopped
  • 6 Medium Red Potatoes -- Chopped
  • 1 Pound Chicken Breast -- Cubed
  • Salt And Pepper -- To Taste
  • 1 Lime Lime Juice
  • 2 Tablespoons Mint -- Chopped
  • 2 Tablespoons -- Chopped
Directions Bring stock, allspice, and red pepper flakes to a boil. Add garlic, onions, celery, carrots and potatoes. Simmer for 30 minutes. Add chicken and cook for 5 minutes. Season with salt and pepper. Remove from the heat and add lime juice, mint and cilantro. Cover and let sit for 5 minutes. Serve.
