Carribean and Tropical   -   Chicken Trinidad   adapted from Classic Main Courses

Ingredients
  • 3 Pounds Chicken
  • 1/4 Cup Olive Oil
  • 2 Cups Rice
  • 1 Small Onion -- chopped
  • 1 Medium Green Pepper -- chopped
  • 8 Ounces Mushroom -- chopped
  • 1/2 Teaspoon Turmeric
  • 1 Can Chicken Broth
  • 1 Teaspoon Angostura Bitters
Directions 1. Saute chicken, rice onion & green pepper in olive oil.
2. Place mixture in botom of dutch oven, add mushrooms.]
3. Dissolve turmeric in 1 cup of broth. Add bitters, then add to pan.
4. Cook over low heat 10 minutes, covered.
5. Add second cup of broth and cook 15 minutes.
Serves 4
