Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Pounds Chicken -- Cubed
  • 1 Medium Onion -- Chopped
  • 1 Bunch Green Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 2 Tablespoons Curry Powder
  • 1/2 Teaspoon Allspice
  • 2 Cups Chicken Broth
  • 1 Tablespoon White Wine Vinegar
  • 1 Teaspoon Thyme
  • 1 Tablespoon Parsley -- Chopped
  • 1 Can Chickpeas -- Drained
  • 1 Large Carrot -- Chopped
  • 1 Medium Zucchini -- Sliced
  • 1 Medium Jalapeno -- Chopped
Directions Saute chicken in oil until browned. Add onions and garlic. Saute for 5 minutes. Add curry powder, allspice, broth, vinegar, thyme, parsley and chickpeas. Cover, simmer for 10 minutes. Add carrots, zucchini and jalapeno. Simmer for 20 minutes. Serve.
