Carribean and Tropical   -   Creole Chicken (West Indies)   adapted from rice dishes of the world

Ingredients
  • 1 Cup Uncooked Rice -- cooked
  • 2 Large Chicken Breast -- cubed
  • 1 Medium Avocado -- chopped
  • 2 Large Tomato -- chopped
  • 1 Large Onion -- chopped
  • 3 Cloves Garlic -- chopped
  • 1 Cup Parsley -- chopped
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Chili Powder
  • Salt And Pepper -- to taste
Directions Saute garlicl, onions & chicken until chicken is thoroughly browned. Add remaining ingredients except parsley. Cook slowly for 10 minutes. Sprinkle with parsley & serve.
