Carribean and Tropical   -   Creole Shrimp And Dolphinfish (Haiti)   adapted from Caribbean Light by Donna Shields

Ingredients
  • 2 Teaspoons Olive Oil
  • 1 Large Onion -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Teaspoon Arrowroot
  • 1 Can Tomatoes -- Diced
  • 4 Cloves Garlic -- Chopped
  • 1 Teaspoon Salt
  • 1 Small Habanero Chile -- Chopped
  • 1 Can Chicken Broth
  • 3/4 Cup White Wine
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Oregano
  • 4 Large Dolphinfish Fillet
  • 1/2 Pound Shrimp
  • 1 Bunch Cilantro -- Chopped
Directions Saute onion and pepper in oil for 10 minutes. Add arrowroot and saute for 1 minute. Add tomatoes, garlic, salt and habanero. Bring to a boil, reduce heat, and simmer for 20 minutes. Add stock, wine, thyme and oregano. Boil and add the fish. Reduce heat to low, cover, simmer for 5 minutes. Add shrimp, cover and simmer for 2 minutes. Remove from heat and stir in cilantro. Serve over rice.
