Carribean and Tropical   -   Fish With Citrus Sauce (Eleuthera)   adapted from Good to Eat by Burt Wolf

  • 1/2 Cup Orange Marmalade
  • 2 Tablespoons Horseradish Sauce
  • 3 Cloves Garlic -- Chopped
  • 1/4 Cup Parsley -- Chopped
  • 1/2 Teaspoon Tabasco Sauce
  • 1 Lime Lime Juice
  • 1/2 Cup Pineapple Juice
  • 2 Tablespoons Cognac -- Optional
  • 3 Tablespoons Olive Oil
  • 1/2 Teaspoon Salt
  • Pepper -- To Taste
  • 6 Large Salmon Steak -- Or Sea Bass
Directions Combine marmalade, horseradish, garlic, parsley, tabasco, lime juice, pineapple juice, cognac and oil. Season with salt and pepper. Add salmon and marinate for 2 hours. Grill or Broil for 5 minutes per side. Basting occasionally. Serve.
