Carribean and Tropical   -   Griot (Haiti)   adapted from The Complete Caribbean Cookbook

  • 2 Pounds Pork Loin -- Cubed
  • 2 Cloves Garlic -- Chopped
  • 2 Medium Onion -- Chopped
  • 4 Medium Green Onion -- Chopped
  • 2 Medium Jalapeno -- Chopped
  • Salt And Pepper -- To Taste
  • 2 Limes Lime Juice
  • 1 Orange Orange Juice -- Sour
  • 1 Cup Beef Broth
  • 4 Tablespoons Olive Oil
Directions Combine pork, garlic, onions, peppers, salt, pepper, lime and orange juice. Marinate for 1 hour, longer is better if you have the time, up to 24 hours. Transfer pork and marinade to saucepan, add broth and bring to a boil. Simmer for 1 hour or until broth evaporates. Remove pork to a skillet. Add oil and saute pork until well browned. Serve with the vegetables on top with tortillas.
