Carribean and Tropical   -   Haitian Rice And Beans   adapted from The South American Cookbook by Cora, Rose and Bob Brown

  • 1 Pound Kidney Beans -- Cooked
  • 1 Tablespoon Olive Oil
  • 1 Pound Ham -- Cubed
  • 1 Clove Garlic -- Chopped
  • 1/2 Teaspoon Thyme
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Butter
  • 1 Pound Rice -- Cooked
Directions Saute ham in oil for 5 minutes. Add beans, garlic, thyme, salt, pepper and butter. Stir until butter melts. Add rice and saute for 5 minutes. Serve.
