Carribean and Tropical   -   Hot Shrimps (Grenada)   adapted from Tropical Cookbook

  • 1 Small Onion -- chopped
  • 2 Tablespoons Olive Oil
  • 1 Can Rotel Tomatoes
  • 1 Pound Cheddar Cheese -- shredded
  • 1 Can Cocktail Shrimp -- (4 oz) drained
  • 1 Dash Cayenne Pepper
  • Tortilla Chips
Directions Saute onion in oil until soft. Add rotel tomatoes, when mixture startes to steam, add cheese. Cook until cheese melts. Stir in shrimp and cayenne. Use tortilla chips to dip.
