Carribean and Tropical   -   Pork With Onions (Cha Saik Chrouk Nung Ktum Barang)   adapted from The Elephant Walk Cookbook

Ingredients
  • 3 Tablespoons Peanut Oil
  • 1 Pound Pork Tenderloin -- cubed
  • 2 Tablespoons Fish Sauce
  • 2 Teaspoons Sugar
  • 1/2 Teaspoon White Vinegar
  • 1 Huge Onion -- wedged
  • 2 Scallion -- finely chopped
Directions Heat oil in wok.
Add meat, saute 1 minute. Add fish sauce, sugar & vinegar, cook 1 minute. Add onion, stir fry 6 minutes. Remove from heat. serve over rice & scatter with scallions.
Serves 4
