Carribean and Tropical   -   Puree Of Garbanzo Soup (Curacao)   adapted from The Complete Caribbean Cookbook

Ingredients
  • 8 Ounces Chickpeas -- Cooked
  • 3 Cups Chicken Broth
  • 1 Medium Onion -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1/2 Teaspoon Pepper
  • 1/2 Teaspoon Cumin
  • Salt -- To Taste
  • 3/4 Cup Evaporated Milk -- Optional
Directions Combine all ingredients except milk and simmer for 20 minutes. Add milk if using and bring to a serving temperature. Remove from heat and puree in batches. Place back in soup pan and return to a serving temperature.
Serves 4
