Ingredients
  • 4 Tablespoons Olive Oil
  • 1 Large Onion -- diced
  • 2 Cloves Garlic -- diced
  • 2 Poblano Peppers -- diced
  • 4 Slices Bacon -- diced
  • 1 Can Red Kidney Beans -- drained
  • Salt And Pepper -- to taste
  • 1 3/4 Cups Rice -- cooked
Directions Saute onion, garlic, peppers & bacon until bacon is well cooked & browning. Add beans & spices and enough water to allow it to simmer, 20 minutes. Toss with cooked rice.
Serves 4
