Carribean and Tropical   -   Shrimp Scampi   adapted from Tropical Cookbook

  • 2 Pounds Shrimp -- thawed
  • 2 Tablespoons Extra Virgin Olive Oil
  • 8 Ounces Butter
  • 2 Teaspoons Basil
  • 1/2 Teaspoon Oregano
  • 6 Cloves Garlic
  • 1/4 Teaspoon Pepper
  • 1/2 Teaspoon Salt
  • 2 Tablespoons Dry White Wine
  • Seasoned Bread Crumbs -- for coating
Directions 1. Peel, deveine shrimp if not already done.
2. Bread shrimp in bread crumbs (shake in plastic bag or dredge in a bowl to coat).
3. Place shrimp in shallow baking pan, sprinkle with the olive oil.
4. Blend all remaining ingredients in a bowl, until well blended.
5. With knife or rubber spatula, spread scampi butter over all the shrimp.
6. Broil shrimp at 550* for 2-8 minutes, depending on the size of the shrimp.
