Carribean and Tropical   -   Shrimp With Mushrooms And Dill (Cayman Islands)   adapted from Tropical Cookbook

Ingredients
  • 1 Pound Shrimp -- peeled & deveined
  • 3 Tablespoons Butter
  • 1 Pound Fresh Mushrooms -- sliced
  • 3 Cloves Garlic
  • 1/4 Cup Flour
  • 2 Tablespoons Dry White Wine
  • 1 1/4 Cups Milk
  • 1/4 Cup Cream
  • 1 Teaspoon Dried Dill Weed
  • Salt And Pepper -- to taste
  • 3 Teaspoons Brandy -- any type
Directions Saute mushrooms and agarlic in butter, 2 minutes. Add shrimp, and saute until shrimp turns pink. Remove shrimp to a bowl. Add flour, stir to thicken, gradually whisk in milk, cream and wine. Cook until mixute becomes very thick and smooth. Add remaining ingredients, and return shrimp to pan. heat the shrimp back up and serve.
