Ingredients

- 1 Pound Pork -- cubed
- 2 Cloves Garlic -- finely chopped
- Salt -- to taste
- 1 Large Jalapeno -- finely chopped
- 1 Medium Onion -- finely chopped
- 1 Small Onion -- finely chopped
- 2 Tablespoons Parsley -- finely chopped
- 1 Small Cucumber -- finely chopped
- 3 Medium Green Onion -- finely chopped
- 1 Stalk Celery -- finely chopped
- 2 Sprigs Thyme -- finely chopped
- 1 Tablespoon Vinegar
- 1 Lime Lime Juice

Directions
|
Place pork in a large saucepan and add enough water to cover. Add garlic, salt, jalapeno and the medium onion. Bring to a boil, reduce heat, cover and simmer for 20 minutes. Drain and set aside to cool. In large bowl combine meat and remaining ingredients. Let stand 1 hour to allow flavors to meld.
