Carribean and Tropical   -   Tropical Mango Barbarqui Sauce   adapted from global vegetarian

  • 1 Ripe Mango -- peeled and chopped
  • 1 Medium Yellow Onion -- diced
  • 1 Medium Carrot -- peeled and diced
  • 1/2 Medium Scotch Bonnet -- seeded and chopped
  • 2 Cloves Garlic -- chopped
  • 1 Cup Red Wine Vinegar
  • 1/2 Cup Pineapple Juice
  • 2 Tablespoons Worcestershire Sauce
  • 1/3 Cup Brown Sugar, Packed
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Allspice
Directions In a glass saucepan, combine all ingredients, combine all ingredients and stir occasionally. 25 minutes. mixture will attain a jam like consistancy. allow to cool to room temperature. put in food processor and blend for 15 seconds. sauce keeps in refrigerator for several weeks.
