Carribean and Tropical   -   Unicorn Black Bean Soup   adapted from Tropical Cookbook

Ingredients
  • 32 Ounces Black Beans -- canned
  • 8 Cups Stock
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- chopped
  • 8 Cloves Garlic -- minced
  • 1 Teaspoon Thyme
  • 2 Teaspoons Cumin
  • 2 Teaspoons Chili Powder
  • 2 Ounces Burgundy
  • 1 Tablespoon Soy Sauce
  • Salt And Cayenne Pepper -- to taste
  • 2 Medium Tomatoes -- chopped
  • 2 Bay Leaves
  • 1 Small Onion -- chopped (to garnish)
Directions Saute 1st onion til transparent. Add garlic, thyme, cumin, chili powder, wine, soy sauce, salt, cayenne, and tomatoes. Saute 10 minutes. In large stew pot, bring beans & stock to boil. When boiling, add onion mixture and bay leaves. Simmer 1 hour. Top with chopped raw onion.
