Carribean and Tropical   -   West Indian Beef Stew (Aruba)   adapted from Sarah Leah Chase's Cold-Weather Cooking

Ingredients
  • 1/2 Cup Flour
  • 1 Teaspoon Ginger
  • 2 Teaspoons Salt
  • 1 Teaspoon Pepper
  • 2 Pounds Beef -- Cubed
  • 5 Tablespoons Olive Oil
  • 1 Large Onion -- Chopped
  • 1 Medium Red Bell Pepper -- Chopped
  • 3 Medium Jalapeno -- Chopped
  • 3 Cloves Garlic -- Chopped
  • 1 Teaspoon Ginger
  • 1 Can Tomato Paste
  • 1 Tablespoon Molasses
  • 1 Can Beef Broth
  • 1/4 Cup Olives -- Sliced,Optional
  • 1 Can Tomatoes -- Chopped
  • 1 Lime Lime Juice
  • 3 Tablespoons Rum -- Optional
  • 1/2 Cup Cilantro -- Chopped
  • 1/2 Cup Macadamia Nuts -- Chopped, Optional
Directions Mix together flour, ginger, salt and pepper. Coat the beef in this mixture. Saute beef in oil until well browned. Add onion, saute 3 minutes. Add bell pepper, jalapeno, garlic and ginger. Saute for 5 minutes. Stir in tomato paste, molasses and broth. Bring to a boil and simmer for 30 minutes. Add olives and tomatoes, simmer for 5 minutes. Add lime juice and rum, season with salt and pepper. Simmer for 5 minutes. Serve sprinkled with cilantro and nuts.
