Ingredients
  • 1 Cup Snow Peas
  • 1 Cup Carrots -- shredded
  • 1 Cup Celery -- finely diced
  • 1 Cup Bamboo Shoots -- finely chopped
  • 4 Water Chestnuts -- finely chopped
  • 12 Large Matsuke Mushrooms -- finely chopped
  • 1/2 Tablespoon Peanut Oil
  • 2 Tablespoons Oyster Sauce
  • 2 Teaspoons Soy Sauce
  • 2 Tablespoons Tapioca Flour
  • 1 Teaspoon Salt
  • 1 Teaspoon Sugar
  • 1 Teaspoon Sesame Oil
  • Pepper -- to taste
  • 4 Tablespoons Cold Water
  • 70 Egg Roll Skins
Directions Bring 3 cups water to boil and blanch all vegetables.
Heat peanut oil, all remaining ingredients except vegetables. Simmer until sauce thickens and turns dark brown. Place efetables in electic mixer, start mixer, add sauce and blend throoughly. Remove sauce and refrigerate 4 hours. Place 1 teaspoon in each wrapper, sealing into cresent shapes. Steam 6 minutes.
