Danish   -   Apple Pancakes   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 6 Medium Eggs -- beaten
  • 1/2 Cup Milk
  • 1 Cup Flour
  • 2 Teaspoons Sugar
  • 1/2 Teaspoon Salt
  • 1/2 Cup Half And Half
  • 3 Large Apples -- peeled & Sliced
  • Butter
  • Sugar
  • Cinnamon
  • 1 Lem Lemon Juice
Directions Stir together eggs and milk. Combien flour, sugar and salt. Stir into egg mixture. Add half & half, Fry apple slices in butter in skillet utnil golden. Cover bottoem of heavy skillet with apple slices. Pour batter over slices. Bake in preaheated 500* oven, 20 minutes. Sprinlke with sugar and cinnamon to taste, return to oven until brown. Sprinkle with lemon juice, cut into wedges and serve.
