Danish   -   Cornmeal Pancakes   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 1 1/2 Cups Cornmeal
  • 2 1/2 Cups Flour
  • 4 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 1/4 Cup Sugar
  • 1/4 Cup Butter
  • 2 Medium Eggs -- beaten
  • 1/2 Cup Milk
  • 1 Cup Cold Water
Directions Stir together the corn maeal, flour, baking pwoeder, salt nad sugar. Cut in butter. Add milk and water to eggs, beat well. Add mlk mixture to flour mixture, beat well. Lightly ooil a hot skillet. Pour in batter cook util bubbles appear on surface, (about 4 mintuesO Turn and cook other side. Serve with syrup.
