Danish   -   Ham And Potato Balls   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 2 Cups Potatoes -- mashed
  • 1 Cup Cooked Ham -- chopped
  • Salt And Pepper -- to taste
  • 1 Teaspoon Parsley -- finely chopped
  • 1 Cup Soft Bread Crumbs
  • Oil -- for deep frying
Directions Mix potatoes, ham, salt, pepper and parsley. Shape into small balls. Roll in bread crumbs, then in egg and then again in bread crumbs. Fry in hot oil until well browned. Drain on paper towels and serve.
