Danish   -   Kalvesuppe Med Champignons (Mushroom Soup Madeira)   adapted from Classic Scandinavian Cooking By Nika Hazelton

  • 1/3 Cup Water
  • 1/2 Teaspoon Salt
  • 1 Lemon Lemon Juice
  • 3 Tablespoons Butter
  • 1 Pound Mushroom -- Sliced
  • 2 Tablespoons Flour
  • 8 Cups Chicken Stock
  • Salt And Pepper -- To Taste
  • 1/3 Cup Madeira
Directions Bring water, salt, lemon juice and butter to a boil. Add mushrooms and simmer for 5 minutes. Stir in flour. Add stock and simmer for 10 minutes. Season with salt and pepper. Remove from heat and stir in madeira.
Serves 4
