Danish   -   Lady Fingers   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 3 Medium Egg White
  • 1/3 Cup Powdered Sugar
  • 1/2 Teaspoon Vanilla
  • 3 Medium Egg Yolks -- beaten
  • 1/2 Cup Flour
  • 1/8 Teaspoon Salt
  • 1/3 Cup Powdered Sugar
Directions Beat egg whites stiff. Slowly add 1/3 cup powdered sugar. Fold in vanilla and egg yolks. Sift together the flour, salt and 1/3 cup powdered sugar. Carefully fold in the beaten egg mixture. Press into finger length shapes. Dust with powdered sugar. Bake in 350 degree oven for 10 minutes.
