Danish   -   Quick Coffee Cake With Fresh Fruit   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 1 Cup Fresh Fruit -- see note
  • 2 Cups Flour
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Clove
  • 1/2 Teaspoon Nutmeg
  • 1/2 Cup Soft Butter
  • 1 Cup Sugar
  • 3 Medium Eggs
  • 1/3 Cup Milk
  • 1 1/2 Teaspoons Vanilla
Directions Sift flour, baking powder, salt and spices together. Work the butter until creamy. Add sugar gradually. Beat eggs into sugar mixture and beat until light and fluffy. Stir in the dry ingredients and milk. Add vanilla and fold in the fruit. Pour batter into greased loaf pan and bake in 350 degree oven for 1 hour.
