Danish   -   Spice Cookies   adapted from Wonderful, Wonderful Danish Cooking by Jensen

  • 1 Cup Soft Butter
  • 1 Cup Sugar
  • 1 Medium Egg
  • 3/4 Teaspoon Baking Soda
  • 1/2 Cup Boiling Water
  • 6 Cups Flour -- sifted
  • 1 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Cardamom -- ground
  • 1 Teaspoon Cloves -- ground
  • 1 Cup Molasses
Directions Cream butter and sugar. Beat the egg and add to butter. Stir baking soda into the water. Add molasses then beat into the creamed mixture. Sift 5 cups of flour together with the spices. Add as much of the remaining flour to make a good stiff dough. Roll out about 1/4 inch thick and cut into shapes. Place in refrigerator and let chill for 1 hour. Bake for 15 minutes in 375 degree oven.
