Cajun and Creole   -   Beets Etouffee   adapted from Cookin With Queen Ida

  • 1 Teaspoon Butter
  • 1 Small Red Onion -- chopped
  • 3 Medium Beets -- shoetringed
  • 3/4 Cup Waqter
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Sugar
  • 1/2 Teaspoon Vinegar
Directions Saute onion in butter until soft. Add remaining ingredients. Cover, simmer 20 mintues.
Serves 3
