Ingredients
  • 30 Ounces Butter Beans -- drained & mashed
  • 2 Tablespoons Lemon Juice
  • 2 Large Eggs
  • 3/4 Cup Plain Bread Crumbs
  • 4 Medium Green Onions -- chopped
  • 2 Tablespoons Parsley -- chopped
  • Salt And Pepper -- to taste
  • Hot Pepper Sauce -- to taste
  • ***Sauce***
  • 1 Tablespoon Corn Starch
  • 2 Tablespoons Cold Water
  • 14 Ounces Stewed Tomatoes -- undrained
  • 1 Teaspoon Basil
  • 1/2 Teaspoon Thyme
  • 1/2 Teaspoon Garlic Powder
  • Hot Pepper Sauce -- to taste
Directions To make patties:
Into mashe dbeans, mix lemon juice and eggs. Mix well. Add remaining patty ingredients. Shape into 6 patties. Spary skilllet with nkonstick cooking spray. Add patties, cook 10 minutes unitl lightly browned on both sides.
Sauce:
IN small saucepan, stir cornstarch into cold water until dissolved. Add remaining sauce ingredients. Cook for 3-4 minutes, until bubbly and slightly thickened. Serve over patties.
Serves 6
