Cajun and Creole - Cajun Cornbread

Ingredients
|
- 1 Cup Flour
- 1 Cup Yellow Cornmeal
- 2 Teaspoons Sugar
- 1 Teaspoon Baking Powder
- 1 Teaspoon Salt
- 1/2 Teaspoon Baking Powder
- 1 Cup Milk
- 2 Large Eggs
- 4 Tablespoons Unsalted Butter -- melted and cooled

Directions
|
in large bowl, combine flour, cornmeal, sugar, baking powder, salt and baking soda. mix well. In another bowl, combine milk, eggs and butter. mix well. add wet ingredients to dry ingredients and mix well so no large lumps are still formed. pour batter into 8x8 inch pan and bake at 375 degrees until lightly browned on top about 25 minutes. Serve hot with butter.
