Cajun and Creole   -   Cilantro Fried Shrimp   adapted from Louisiana Tastes by Paul Prudhomme

Ingredients
  • 2 Teaspoons Salt
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Dry Mustard
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Oregano
  • 1 Teaspoon Cumin
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Paprika
  • 1 Teaspoon Pepper
  • 2 Pounds Shrimp
  • 1 1/2 Cups Flour
  • 3 Large Eggs
  • 1/2 Cup Milk
  • 1 Bunch Cilantro -- Chopped
Directions Combine seasoning mix. Combine mix with shrimp. Whip eggs and milk together. Combine flour and cilantro. Dredge in flour then in egg wash, then in flour again. You can skillet fry or deep fry them. Serve over rice if desired.
