Cajun and Creole   -   Cilantro Salmon With Roasted Onions   adapted from Louisiana Tastes by Paul Prudhomme

Ingredients
  • 2 Teaspoons Paprika
  • 1 Teaspoon Salt
  • 1 Teaspoon Basil
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Dry Mustard
  • 1 Teaspoon Oregano
  • 1 Teaspoon Pepper
  • 1/2 Teaspoon Nutmeg
  • 4 Large Salmon Fillet
  • 2 Tablespoons Olive Oil
  • 1 Large Onion -- Roasted And Chopped
  • 2 Cloves Garlic -- Finely Chopped
  • 1 Bunch Cilantro -- Chopped
  • 2 Cups Chicken Broth
  • 8 Ounces Pasta -- Cooked;Any Kind
  • 1 Tablespoon Flour
Directions Combine seasoning mix. Sprinkle over fish. Whisk olive oil and flour together and heat in a saucepan. Add onions and garlic. Saute for 10 minutes. Stir in cilantro and cook for 2 minutes. Add broth. Boil, simmer for 3 minutes and remove from heat. Saute fish in a skillet until done. Toss pasta with sauce and heap onto a plate, cover with a fish fillet and serve.
