Cajun and Creole   -   Crab Stuffed Zucchini   adapted from Classic Main Courses

Ingredients
  • 4 Large Zucchini -- hollowed
  • 3 Tablespoons Olive Oil
  • 1 Small Onion -- chopped
  • 2 Stalks Celery -- chopped
  • 1 Small Bell Pepper -- chopped
  • 2 Cloves Garlic
  • 6 Tablespoons Bread Crumbs
  • 1 Teaspoon Basil
  • 1/2 Teaspoon Thyme
  • Salt And Pepper -- to taste
  • Cayenne -- to taste
  • 3 Tablespoons Milk
  • 1 1/2 Cups Crab Meat -- `
  • Parmesan Cheese -- grated
Directions Preheat oven to 350*.
Slice zuc's lengthwise, scoop out pulp, chop pulp and saute it with the onions, celery, bell peper and garlic, about 12 minutes. Remove from heat.
In a large bowl, mix crumbs, herbs, spices & cooked veggies, add milk so that mixture is moist but not mooshy. Add crab meat, stir and then stuff into squash shells.
Sprinkle with cheese, bake in baking dish about 20 minutes.
Serves 4
