Cajun and Creole   -   Creole Baked Fish   adapted from Cookin With Queen Ida

Ingredients
  • 3 Pounds Fish Fillets -- your choice
  • Salt And Pepper -- to taste
  • Cayenne -- to taste
  • 1/2 Teaspoon Garlic Powder
  • 2 Teaspoons Flour
  • 1 Can Stewed Tomatoes -- chopped
  • 1/2 Cup Parsley -- chopped
  • 1/2 Cup Water
  • 2 Stalks Celery -- chopped
  • 1 Small Red Bell Pepper -- chopped
  • 1 Large Onion -- chopped
  • 2 Cloves Garlic -- chopped
  • 2 Teaspoons Olive Oil
  • 1/4 Teaspoon Thyme
Directions Preheat oven to 350*.
Mix salt, pepper, cayenne and garlic powder, rub into fish, both sides. Sprinkle with flour. Place fish in a baking pan large enough to hold them Combine remainginingredients and pour over fish. Bake uncovered 30 minutes, or until fish flakes easily.
Serves 6
