Cajun and Creole   -   Creole Curry Chicken   adapted from chicken breasts

Ingredients
  • 1 Tablespoon Olive Oil
  • 2 Cloves Garlic
  • 1 Large Onion -- chopped
  • 3 Chicken Breasts
  • 1/2 Teaspoon Red Pepper Flakes
  • 2 1/2 Tablespoons Curry Powder
  • 1/2 Teaspoon Ground Ginger
  • Salt -- to taste
  • 1/4 Cup Chicken Stock
Directions Saute onion and garlic. Add chiken, saute on each side 2 minutes. Add remaining ingredients. Cover, simmer 20 minutes.
Serves 4
