Cajun and Creole   -   Creole Style Tomato Soup   adapted from Emeril Lagasse

Ingredients
  • 2 Tablespoons Olive Oil
  • 2 Medium Onion -- Chopped
  • 2 Stalks Celery -- Chopped
  • 1 Large Carrot -- Chopped
  • 2 Teaspoons Salt
  • 1/4 Teaspoon Cayenne
  • 1/4 Teaspoon Pepper
  • 2 Cloves Garlic -- Chopped
  • 8 Cups Tomatoes -- Chopped
  • 2 Quarts Chicken Broth
  • 1/4 Cup Parsley -- Chopped
Directions Saute onions, celery and carrots in oil for 5 minutes. Add salt, cayenne and pepper. Saute until onions are browned. Add garlic and tomatoes. Cook for 4 minutes. Add broth and bring to a boil. Reduce heat to medium and simmer for 1 hour. Add parsley and serve.
