Cajun and Creole   -   Green Redfish   adapted from Emeril Lagasse

  • 4 Medium Redfish Fillets
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Tabasco Jalapeno Sauce
  • 2 Medium Onion -- Thinly Sliced
  • 1 Tablespoon Olive Oil
Directions Season fish with salt and jalapeno sauce. Place in bowl and cover with onions. Marinate for 30 minutes. Remove fish from marinade and drizzle with oil. Grill or broil for 5 minutes per side. Saute the onions from the marinade until well browned. Serve fish topped with onions.
