Cajun and Creole   -   Grillades Aux Tomates   adapted from Cookin With Queen Ida

Ingredients
  • 1 Pound Beef -- cut into 1/2 strips
  • 1 Teaspoon Salt
  • 1 Teaspoon Cayenne
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Pepper
  • 1/4 Cup Flour
  • 1 Can Beef Broth
  • 1/2 Cup Water
  • 1/4 Teaspoon Thyme
  • 2 Tablespoons Olive Oil
  • 2 Large Tomatoes -- chopped
  • 1 Small Bell Pepper -- chopped
  • 1 Large Onion -- chopped
  • 1/2 Cup Parsley -- chopped
  • 5 Medium Green Onion -- chopped
  • Rice -- cooked
Directions Season beef with salt, pepper, cayenne and garlic powder and refrigerate overnight. Roll meat in flour. Saute in very hot oil. Brown on both sides. Add tomaotes, bell pepper, onion. Saute covered 5 minutes. Add broth, water and thyme. Boil, reduce heat, simmer 30 minutes. Add parsley, green onions and simmer 1 hour. Serve over rice.
