Cajun and Creole   -   Maque Choux   adapted from cajun cooking

Ingredients
  • 4 Tablespoons Olive Oil
  • 2 Medium Onion -- chopped
  • 2 Cloves Garlic -- chopped
  • 1 Medium Green Pepper -- chopped
  • 6 Medium Tomatoes -- chopped
  • 8 Ounces Corn
  • 1 Cup Vegetable Broth
  • Salt And Pepper -- to taste
  • 1/2 Teaspoon Cayenne
  • 4 Tablespoons Cream
Directions saute onion and garlic for 5 minutes. add green pepper, tomatoes, corn and stock. boil, reduce heat and cover, simmer for 10 minutes. add remaining ingredients and heat til warm and serve.
