Cajun and Creole - New Orleans Fish And Rice Creole

Ingredients

- 1 Pound Fish Fillet
- 1/2 Teaspoon Salt
- 1 Can Whole Tomatoes
- Water
- 1 Cup Rice
- 1 Large Onion -- chopped
- 4 Cloves Garlic
- 2 Tablespoons Lemon Juice
- 2 1/2 Teaspoons Dried Basil
- 1 Teaspoon Oregano
- 1/2 Teaspoon Hot Pepper Sauce
- 1/4 Teaspoon Pepper
- 2 Medium Carrot -- shredded
- 1 Medium Green Pepper -- diced

Directions
|
sprinkle fish with salt. roll up, skinned side in. secure with toothpicks drain and chop tomatoes, reserve liquid. add water to make 1 1/3 cups with tomato juice. bring tomato liquid to boil, add everything and place fish on top. bring to boil, cover, reduce heat and simmer 25 minutes or until fish flakes. make sure to remove toothpicks. :)
